Not Yo Average Nacho Cheese

Upon some reflection on vegan mystery cheese, particularly nacho cheese, I realized that just because something is dairy free or vegan it doesn't mean that it's necessarily healthy. Vegan and/or dairy-free fare can also be made with tons of additives, artificial flavors, ingredients that I have no right even trying to pronounce, and be devoid of nutritional value. Shortly after this thought, I found myself in the kitchen putting my culinary nutrition skills to use. The result, in my humble opinion, a pretty darn good option for dairy-free nacho cheese with nutritional value and ingredients that you can pronounce!
